Camping recipe – Honey Mustard Chicken

This recipe is a family favourite and as it doesn’t contain onions or garlic is FODMAP friendly. I add pumpkin and beans. Cooking can be done in camp oven, frypan or casserole in oven. Serves 4. (Editor Note: A diet low in FODMAP carbohydrates may help people with irritable bowel syndrome or other gut disorders.)

Ingredients

  • 2 chicken breasts
  • 1/2 cup chicken stock (Massel 7’s is FODMAP friendly)
  • 1 dessertspoon soy sauce 
  • 1 dessertspoon Worcestershire sauce
  • Squeeze lemon juice
  • 1 dessertspoon honey
  • 1 dessertspoon oyster sauce
  • 1 dessertspoon balsamic vinegar
  • 2 tablespoons grain mustard
  • Veg of choice

Method

  1. Cut chicken into large bite size pieces and dust with seasoned flour.
  2. Heat camp oven or frypan.
  3. Fry lightly in oil till lightly coloured then add all other ingredients, stir well and cook gently about 20-30 minutes.
  4. Serve with rice or pasta.
