This recipe is a family favourite and as it doesn’t contain onions or garlic is FODMAP friendly. I add pumpkin and beans. Cooking can be done in camp oven, frypan or casserole in oven. Serves 4. (Editor Note: A diet low in FODMAP carbohydrates may help people with irritable bowel syndrome or other gut disorders.)
Ingredients
- 2 chicken breasts
- 1/2 cup chicken stock (Massel 7’s is FODMAP friendly)
- 1 dessertspoon soy sauceÂ
- 1 dessertspoon Worcestershire sauce
- Squeeze lemon juice
- 1 dessertspoon honey
- 1 dessertspoon oyster sauce
- 1 dessertspoon balsamic vinegar
- 2 tablespoons grain mustard
- Veg of choice
Method
- Cut chicken into large bite size pieces and dust with seasoned flour.
- Heat camp oven or frypan.
- Fry lightly in oil till lightly coloured then add all other ingredients, stir well and cook gently about 20-30 minutes.
- Serve with rice or pasta.
