Chicken tonight? Try Stir-Fried Chicken with Chillies and Peanuts

Delicious! The teen particularly loved it – I think because it was so saucy. He said for me to add more chilli next time! (This was probably because instead of four small chillies I had one larger red chilli.) I did also add bok choy, and shallots (or spring onions), too. We served Stir-Fried Chicken with Chillies and Peanuts with brown rice, for added fibre and lower GI. I hope the Easter Bunny hopped to your home last weekend?

Heatley and I have been on a ‘reboot’, and Easter Sunday marked the end of two months of eating changes and fitness fun. Who’d have thought we could get through the COVID crisis so far without alcohol or the caravan? Potato Bake in the Weber

Contributed by Leanne Heggie, Cake and Eat It 3 – check out their travels and educational tools for kids travelling Australia at www.cakeandeatit3.com  Another family favourite, comfort food at its best and boy does it smell good while it is cooking! We cook this in the Weber casserole dish, which we place on the aluminium convection tray. To save cleaning I place baking paper in the bottom of the casserole dish. Yes, the view is impressive, but so is what is inside! After Kingscliff Beach Holiday Park had their makeover, I do believe this camp kitchen may be THE best I have seen yet! What do you think?
