Fun and favourite camping cocktails and mocktail recipes

When it comes to camping cocktails, you don’t need the pretty glasses, or a swag of ingredients. Here are seven of my favourite recipes – perfect for summer! Each recipe makes one serve! Garnishes are optional, (unless you like it that way) and so are cocktail shakers as you travel. I don’t know about you, but I don’t camp with a food processor – so just use what you have. If you are after a mocktail, simply omit the alcohol or replace it with a non alcoholic spirit or bubbles. Also, if you want the cocktail to have

The Easiest & Quickest Seafood Recipe Ever

Thanks to Terry Conway for this recipe. He told us: “I am an enthusiastic cook, in and outdoors, we have a home-made Wok burner, pizza /bread oven, smoker etc. I make sourdough regularly, and I preserve our olives and make prosciutto etc.” And another tip from Terry: “Weber BabyQ is the bees’ knees, but make sure you put a chain on it!” IngredientsFresh green prawns or scallops (or both)Japanese Kewpie mayonnaiseOlive/avocado/peanut oilSkewersGas gun/blowtorch Method Skewer 2 or 3 prawns on each skewer so they lay straight. San Choy Bau Recipe

San Choy Bau is one of those dishes my kids keep asking for again and again. It’s a great one for camping because the ingredients store easily (oyster sauce should be kept in the fridge), and you only need one pan. The same amount works as a starter for a large group (gem lettuce leaves work better for this) – or feed the family as an easy carb-free lunch. I normally use chicken mince but pork mince works well, too. It can be made ahead of time and reheated when you want it!  Ingredients 1 packet dried shitake mushrooms

Where to camp along the Cooloola Farmer’s Trail at Gympie and Noosa Hinterland, Queensland

Rossmount Nursery Cooloola Farmer’s Trail is on again! So if you are travelling or not far from the Gympie or Sunshine Coast regions, September 10-11, make the most of it. You can spend a weekend or see it in a day trip – just bring an empty belly – there is good eating and good camping to be had.  Check this out online at https://cooloolafarmtrail.com.au/farm-trail/ This trail was on my priority trips, last year. So I can vouch for quite a few of these personally – and we enjoyed lunch just this month, at the newest of them all! On the
