Chicken tonight? Try Stir-Fried Chicken with Chillies and Peanuts

Delicious! The teen particularly loved it – I think because it was so saucy. He said for me to add more chilli next time! (This was probably because instead of four small chillies I had one larger red chilli.) I did also add bok choy, and shallots (or spring onions), too. We served Stir-Fried Chicken with Chillies and Peanuts with brown rice, for added fibre and lower GI. Recipe for you: Beef Casserole

By contributor, Karen Cooper – thanks for sending this in to the Camps Australia Wide Community Cook Book. I cook this in advance and freeze for our camp trips. It’s great with potatoes cooked in the fire, or mashed potatoes. Ingredients: 1 kg beef rump steak cubed 40 g (or 2 tablespoons) plain flour Olive oil 1 chopped onion 1 tablespoon tomato paste 1 tablespoon Dijon mustard 500 ml beef stock 2 tablespoon Worcestershire sauce 4 chopped carrots Method: Coat beef in flour and brown in small amounts. A perfect summer recipe from the Camps Australia Wide Community Cookbook, David R Jones is pictured creating this recipe at Lawn Hill Gorge, (known as Boodjamulla, QLD site 388 in Camps 10). However, he first made this recipe camped at Kudrimitchie on the Cooper (SA site 691 in Camps 10). He said, sitting around the campfire eating it was wonderful.
